Domaine Billaud Simon This estate has passed from father to son since 1815. The young, talented, intelligent, and energetic Samuel Billaud is presently at the reins. Throughout the Cote de Beaune, in the cellars of that region’s established and rising stars, Billaud’s name is constantly mentioned as Chablis’s hope for the future. Billaud enjoys experimenting with oak (in contrast to the vast majority of modern day Chablis which are made in massive stainless steel tanks hooked up to computer systems) The results are outstanding, displaying mineral notes with toast, flowers and faint hints of crème brulee and vanilla beans. These are wines with a superb concentration, grip and length.
